What Miss Reeve’s Recipe says about Boston Eggs:
Ingredients: 3 eggs – separated 1/4 large onion – finely chopped 3/4 oz margarine Level tsp flour Seasoning with nutmeg 1/2 gill cream or milk 2oz chopped cooked ham Fry onion in margarine Stir in the flour and cook for 1 minute Add milk, seasoning and nutmeg Bring to boil. Beat in yolks. Add1/2 ham Add 1/2 lemon. Fold in beaten whites Turn into a greased au gratin dish. Sprinkle with remaining ham. Bake 15-20 mins in a hot oven.
