Potato Cheese and Tomato Pie

1 1/2 lb cooked creamed potato 1/2 lb tomatoes 1/2 lb cheese
1. Mix most of cheese with potato. 2. Arrange tomato and potato in dish like apple charlotte 3. Sprinkle cheese on top. Bake in a hot oven 20 mins.

I googled photographs of Apple Charlotte . Needless to say I didn’t make this dish look like those!  I kept the skin on the potatoes (home grown so I have no idea what type of potato as I tend to just dig them up, bring them in and mix them up!). I used parmesan cheese as it was all I had but I think you can add any type of cheese – goat’s cheese or blue cheese might be nice.
